Healthy Chocolate? I LOVE WHEN EMILY MAKES THESE
Adapted from this recipe, pictured above.
1/2 cup high quality cocoa powder
1/2 cup smooth almond butter
1/4 cup raw honey or maple syrup
1/2 teaspoon vanilla
Melt coconut oil. Blend all ingredients together in a food processor or blender. Pour into paper-lined muffin tin cups or silicon muffin cups and fill half-inch full. Makes 10. Chill for 30 minutes or freeze for 10 minutes. When firm, remove. Store in a sealed container in the refrigerator. Mmm-mm!

Meat of choice (Easter Ham or Fish, etc) with Honey Butter Lima Beans

Really grease (PAM) inside of crockpot and lid
Rinse lima beans with warm water
Add-2 cups dried small lima beans, 8 cups water
After cooked, divide beans into two heat safe bowls.
In one bowl add 1/4 cup honey and 2 Tablespoons butter, salt and pepper, onion salt (Monday)
In the other bowl add 1/4 cup brown sugar and 3/4 cup ketchup, salt and pepper (Thursday)

(I will probably use a pork chop if it is cheaper than a medallion cut. I will use my homemade apricot jelly "1/2 cup with 1/2 of warm water" instead of making an Apricot Orange Sauce - hey its in the frig - so basically free.)

(I will use soy sauce instead of tamari sauce. Tamari is $22.56 a bottle at Walmart. I will use orange juice from an orange - let's make these meals budget friendly)

Panini sandwich with Ketchup Brown Sugar Lima Beans Leftover

Fill the sandwich with bacon or cheese or sliced deli meats then cook on Panini grillI

We made the American Gyros and loved them!! We didn't have ranch dressing so we used tartar sauce and I think it actually made it even better.
I didn't take pictures, but one Sunday I made French dip sandwiches using the crock pot. The next day we used the left-over meat to make fajitas. We used fajita seasoning, bell peppers and onions.
