4 dinner ideas April Fools week 2013

Monday
Meat of choice (Easter Ham or Fish, etc)  with Honey Butter Lima Beans

(I will not buy creole seasoning - just to save on the budget. Use paprika)
Crockpot Lima Beans Instructions:
(High 8 hours or Low 4 hours)
Really grease (PAM) inside of crockpot and lid
Rinse lima beans with warm water
Add-2 cups dried small lima beans, 8 cups water
After cooked, divide beans into two heat safe bowls.
In one bowl add 1/4 cup honey and 2 Tablespoons butter, salt and pepper, onion salt (Monday) 
In the other bowl add 1/4 cup brown sugar and 3/4 cup ketchup, salt and pepper (Thursday) 



Tuesday
Pork Medallions with Apricot Orange Sauce
Green Beans 

(I will probably use a pork chop if it is cheaper than a medallion cut. I will use my homemade apricot jelly "1/2 cup with 1/2 of warm water" instead of making an Apricot Orange Sauce - hey its in the frig - so basically free.)

Wednesday
Pork (leftover) Stir-fry over Rice Bowl

(If asparagus it over $2.00 a pound I will be buying broccoli) 
(I will use soy sauce instead of tamari sauce. Tamari is $22.56 a bottle at Walmart. I will use orange juice from an orange - let's make these meals budget friendly)  

Thursday
Panini sandwich with Ketchup Brown Sugar Lima Beans Leftover

Panini sandwich cream cheese spread:  http://www.cooks.com/rec/doc/0,171,147168-255192,00.html (I will probably not use all these ingredients. I'm cutting costs)
Fill the sandwich with bacon or cheese or sliced deli meats then cook on Panini grill

Just came back from getting my groceries for the week. Love that these meals are easy, healthy, and very budget-friendly. I just got a thick slice of ham from the deli($2) for the Monday meal and a few sandwich slices of turkey to add on the panini night and boneless pork chops were on sale ($3) so I got those instead. I wasn't going to get asparagus but they were on sale so I got a bundle to use instead of the green beans and in the stir fry. Yum! If you get bacon for the panini night-you could cut up a strip or two and put it in the brown sugar/ketchup beans. Thanks for posting (and teaching!!) mom!
